Bake the pumpkin cupcakes
- Preheat the oven to 350F and line a cupcake tin with liners.
- Whisk together the all-purpose flour, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt.
- In a stand mixer, beat the softened butter and brown sugar until light and fluffy.
- Add the eggs one at a time, then beat in the pumpkin puree, sour cream, and vanilla until smooth.
- Add the dry ingredients to the wet ingredients and mix just until no dry streaks remain.
- Divide batter into cupcake liners, filling each about 2/3 full.
- Bake for 18 to 20 minutes, until a toothpick comes out clean or with a few moist crumbs.
- Cool the cupcakes completely before frosting.
Make and frost with caramel cream cheese frosting
- Beat the softened cream cheese and softened unsalted butter until smooth.
- Add the thick caramel sauce and mix until evenly tinted.
- Beat in the powdered sugar and vanilla until fluffy and pipeable.
- Pipe a generous swirl of frosting onto each cupcake, then drizzle with salted caramel for drizzling.
Notes
For a tighter swirl, wait until the cupcakes are fully cool before frosting; warm cupcakes can melt the frosting. Store unfrosted cupcakes airtight for up to 3 days, and frosted cupcakes in the fridge for up to 4 days—bring to room temperature before serving for best texture. Freeze unfrosted cupcakes for up to 2 months; thaw and then frost. For a lighter option, use low-fat cream cheese and reduce the powdered sugar slightly if your frosting becomes too loose.
