Ingredients

For cider cake
  • 3 cup flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.25 tsp allspice
  • 0.5 salt
  • 1 cup butter
  • 2.25 cup sugar
  • 4 eggs
  • 2 tsp vanilla
  • 0.5 cup apple cider reduced to 1/2 cup
  • 0.5 cup sour cream
For apple cider glaze
  • 1.5 cup powdered sugar
  • 3 tbsp apple cider reduced + cooled
  • 0.5 tsp cinnamon

Equipment

  • 1 sheet pan
  • 1 Dutch oven

Method

Reduce cider, prep pan
  1. Reduce the apple cider until you have 1/2 cup, then cool fully to room temperature.
  2. Preheat the oven to 325°F, then grease and flour a 10-inch bundt pan so the ridges release cleanly.
Mix batter
  1. Beat the butter and sugar until very light and fluffy.
  2. Add the eggs one at a time, then mix in the vanilla and the reduced cider until smooth.
  3. Alternate adding the flour mixture and the sour cream to the batter, mixing just until each addition is incorporated.
Bake and glaze
  1. Bake for 65 to 75 minutes, until a toothpick in the center comes out clean and the top looks deeply golden.
  2. Cool the cake for 15 minutes in the pan, then invert to release.
  3. Whisk the glaze until smooth, then drizzle over the cooled cake so it settles into the bundt ridges.

Notes

Pro tip: Cool the reduced cider before mixing so the batter stays emulsified and the cake bakes tender instead of greasy. Store covered at room temperature for 2–3 days or in the refrigerator up to 5 days; freeze slices up to 2 months (thaw overnight in the fridge). For a lighter option, use light sour cream and reduce sugar by 2–4 tbsp (texture will be slightly softer).
