Method
Reduce the apple cider
- Reduce 1/2 cup apple cider by half until you have 1/4 cup total, then cool.
- Preheat the oven to 350F and grease a 9x5 loaf pan.
Mix the batter
- Whisk the all-purpose flour, baking powder, cinnamon, nutmeg, allspice, and salt in a bowl.
- Whisk the melted unsalted butter, granulated sugar, brown sugar, eggs, vanilla, reduced apple cider, and sour cream until smooth.
- Fold the flour mixture into the wet ingredients until just combined, then pour the batter into the prepared loaf pan.
Bake and coat
- Bake for 60-65 minutes, until a toothpick comes out clean.
- Remove the loaf from the pan while warm.
- Brush all sides with melted butter, then roll or sprinkle generously with cinnamon sugar to coat.
Notes
Pro tip: Let the reduced cider cool completely before mixing so the eggs don’t scramble and the batter stays smooth. Store the loaf in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days; freeze slices for up to 2 months. Dietary swap: use gluten-free 1:1 baking flour for a gluten-free version (check that your blend already contains xanthan gum).
