Ingredients

Batter
  • 1.5 cup all-purpose flour
  • 0.25 cup granulated sugar
  • 2 tsp baking powder
  • 1.5 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.25 tsp salt
  • 2 eggs
  • 0.5 cup whole milk
  • 1 tbsp melted butter
  • 1 tsp vanilla extract
  • 1.5 cup apples, peeled and very finely diced
  • Vegetable oil for frying
Vanilla glaze
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 0.5 tsp vanilla

Equipment

  • 1 Dutch oven

Method

Make the batter
  1. Whisk all-purpose flour, granulated sugar, baking powder, cinnamon, nutmeg, and salt until evenly combined with no visible dry streaks.
  2. In a separate bowl, whisk eggs, whole milk, melted butter, and vanilla extract, then pour into the dry ingredients.
  3. Fold the wet mixture into the dry ingredients just until combined, stopping as soon as no dry flour remains so the batter stays tender.
  4. Fold in apples, peeled and very finely diced, distributing them throughout the batter.
Fry the bites
  1. Heat 2 inches of vegetable oil in a heavy pot to 360F and maintain that temperature throughout frying.
  2. Drop rounded teaspoon-sized portions of batter into the oil and fry for 2-3 minutes, turning once, until deeply golden on all sides.
  3. Remove the fritter bites to paper towels to drain briefly while you continue frying the remaining batter.
Glaze and serve
  1. Whisk powdered sugar, milk, and vanilla until smooth, then drizzle over the warm fried bites.

Notes

Pro tip: peel and dice the apples very finely so they cook through and stay evenly distributed in every nugget. Keep leftovers in an airtight container in the fridge for up to 2 days; rewarm in a toaster oven at 350F for 3-5 minutes. Freezing: freeze unfrosted bites for up to 1 month and glaze after reheating for best texture. Dietary swap: use a plant-based milk and melted vegan butter substitute to make the batter dairy-free while keeping the same method.
