Apple Pie Oatmeal Cookies

Apple pie oatmeal cookies with caramel bits and finely chopped dried apples bake into golden, chewy centers with crisp edges. Rolled oats add visible texture, while warming spices (cinnamon, nutmeg, and allspice) bring that apple-pie flavor in cookie form.

Ingredients

Apple pie oatmeal cookie dough
  • 1.5 cup all-purpose flour
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.25 tsp allspice
  • 0.5 tsp salt
  • 1 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 0.5 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 3 cup rolled oats
  • 1.5 cup dried apple pieces finely chopped
  • 0.5 cup caramel bits or caramel chips

Method

Prep and preheat
  1. Preheat oven to 375F and line baking sheets with parchment so cookies release easily.
Mix dry ingredients
  1. Whisk flour, baking soda, cinnamon, nutmeg, allspice, and salt together until evenly speckled in color.
Mix wet ingredients
  1. Beat butter and both sugars until fluffy, then add eggs and vanilla and mix until smooth.
Combine dough
  1. Stir the flour mixture into the wet ingredients just until combined, then fold in rolled oats, dried apples, and caramel bits.
Scoop and bake
  1. Scoop dough into 2-tablespoon rounds on the prepared baking sheets and press slightly flat for even spreading.
  2. Bake for 10-12 minutes at 375F until edges are golden and centers are still soft.
  3. Cool on the pan for 5 minutes before transferring, so the cookies finish setting and firm as they cool.

Notes

Pro tip: finely chop the dried apple pieces so they distribute through each cookie instead of pooling. Store airtight at room temperature for up to 3 days or refrigerate up to 5 days. Freeze baked cookies in a single layer, then bag, for up to 2 months (thaw at room temp). For a lighter option, use half the butter and replace with a plant-based butter stick, noting texture may be slightly less rich.
