  • 0.5 cup oat milk or almond milk
  • 1 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 2 cup apples
  • 1 cooking spray
  • 1 cup powdered sugar

Method
 

Make the batter
  1. Whisk gluten-free all-purpose flour blend, granulated sugar, baking powder, cinnamon, nutmeg, and salt in a mixing bowl until evenly combined, with no visible clumps.
  2. In a separate bowl whisk eggs, oat milk or almond milk, melted coconut oil, and vanilla extract until smooth and glossy.
  3. Pour the wet mixture into the dry ingredients and fold just until no dry flour pockets remain, with a thick batter texture.
  4. Fold in the diced apples, then let the batter rest 5 minutes so it thickens slightly.
Air-fry
  1. Preheat the air fryer to 370F; line the basket with parchment and spray with cooking spray so fritters release easily.
  2. Drop 3-tablespoon portions into the air fryer, flatten slightly, and spray the tops with cooking spray for even browning.
  3. Air fry 10-12 minutes total, flipping at 6 minutes so both sides turn golden and crisp with visible caramelized edges.
Glaze and serve
  1. Whisk powdered sugar, oat milk, and vanilla until smooth, thick, and pourable like a drizzle.
  2. Drizzle the glaze over the warm fritters right after cooking so it melts lightly and sets with a glossy finish.

Notes

Pro tip: keep the batter thick—if it looks too loose after the 5-minute rest, wait a minute longer before portioning. Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat in the air fryer at 325°F for 2-3 minutes to re-crisp. Freeze unglazed fritters for up to 2 months; glaze after reheating. For a dairy-free option, use almond milk for the batter and for the glaze (swap oat milk 1:1).
