Season and sear the chicken
- Season boneless skinless chicken breasts with salt, pepper, garlic powder, and dried thyme. Heat olive oil in a large cast iron skillet over medium-high heat, sear chicken for 5-6 minutes per side until golden and cooked through to 165°F (use a thermometer), then remove to a plate.
Cook mushrooms and build the aromatics

Finish and garnish
- Return the chicken breasts to the skillet. Spoon whiskey cream sauce over each breast to coat the top and edges, then let the sauce re-warm for 1 minute.
- Garnish with fresh thyme sprigs for a bright, herb-flecked finish. Serve immediately while the sauce is thick and amber.
