Blue layer
  • 1 box berry blue Jell-O Blue Jell-O flavor for the third layer.
  • 3 cups boiling water, divided boiling water Use 1 cup for dissolving the blue Jell-O.
  • 0.75 cup cold vodka Use 1/2 cup for the blue layer.

Equipment

  • 1 sheet pan

Method

Make the red layer
  1. Dissolve cherry or strawberry Jell-O in 1 cup boiling water, stirring for 2 minutes until fully dissolved, then mix in 1/2 cup cold vodka. Pour into shot cups, filling one-third of the way.
  2. Refrigerate for 45 minutes until the red layer is fully set and holds its shape when gently nudged.
Make and add the white layer
  1. Stir sweetened condensed milk, 1 cup boiling water, and unflavored gelatin until dissolved, then cool slightly before adding 1/2 cup cold water. Spoon gently over the set red layer to avoid disturbing it.
  2. Refrigerate for another 45 minutes until the white layer is fully set.
Make and finish the blue layer
  1. Dissolve berry blue Jell-O in 1 cup boiling water, stir for 2 minutes until smooth, then mix in 1/2 cup cold vodka and cool to room temperature. Gently pour over the white layer to complete the rows.
  2. Refrigerate for at least 1 hour until fully set, then serve cold.

Notes

For clean layers, make sure each layer is fully set before adding the next, and cool the mixed Jell-O to room temperature so it won’t melt the layer underneath. Store covered in the refrigerator up to 3 days; freeze is not recommended because the texture can turn grainy. For a lower-sugar option, use reduced-sugar condensed milk and a reduced-sugar gelatin/Jell-O product if available, keeping the rest of the method the same.
