strawberries

watermelon

honey
  • 3 tbsp honey
fresh lime juice
  • 2 tbsp lime juice fresh
lime zest
  • 1 tsp lime zest
vanilla extract
  • 0.25 tsp vanilla extract
fresh mint leaves
  • 1 fresh mint leaves for garnish

Method
 

Prepare the fruit
  1. Pit and slice the peaches, then add them to a large serving bowl with the blueberries, raspberries, strawberries, and watermelon.
Make the honey-lime dressing
  1. Whisk together the honey, lime juice, lime zest, and vanilla extract until smooth.
Toss and chill
  1. Drizzle the honey-lime dressing over the fruit and toss gently until every piece looks coated and glistening.
  2. Taste the fruit salad and adjust with more honey or lime juice as desired for the balance of sweet and bright.
  3. Cover and refrigerate for 20 minutes so the juices mingle and the dressing clings to the fruit.
Serve

Notes

Pro tip: slice peaches right before assembling to keep them juicy and reduce browning. Store covered in the refrigerator for 2 days; the texture softens the longer it sits. Freezing is not recommended for fresh fruit salad. If you want a lighter option, use maple syrup in place of honey for a similar sweet dressing.
