  • 2 cup apples, peeled and finely diced
  • 1 cup powdered sugar For glaze
  • 2 tbsp milk For glaze
  • 1 tsp vanilla For glaze
  • 0.25 tsp cinnamon For glaze

Equipment

  • 1 sheet pan
  • 1 cast iron skillet

Method

Prep and make spiced filling
  1. Preheat oven to 350F and grease a 9x5 loaf pan.
  2. Mix brown sugar, cinnamon, allspice, and cardamom, then toss half with the diced apples.
Make the batter
  1. Beat butter and granulated sugar until fluffy, then add eggs and vanilla and beat until smooth.
  2. Whisk flour, baking powder, baking soda, and salt, then alternate adding the dry mix and buttermilk to the batter.
Assemble the loaf with a swirl
  1. Pour half the batter into the prepared pan.
  2. Layer in the spiced apple mixture and sprinkle the remaining spiced sugar over the apples.
  3. Top with remaining batter and swirl lightly with a knife for visible cinnamon-apple ribbons.
Bake and glaze
  1. Bake for 55-60 minutes at 350F, until a toothpick comes out clean (no wet batter).
  2. Mix glaze ingredients and drizzle over the loaf while warm so it sets into a thick sheen.

Notes

Pro tip: keep the loaf pan greased and avoid over-swizzling so the apple layers stay distinct in the crumb. Store covered in the refrigerator up to 4 days; rewarm slices briefly in the microwave for a fresh-tasting crumb. Freezing is yes—freeze individual slices up to 2 months and thaw overnight in the fridge. For a dairy-reduced option, use lactose-free buttermilk and substitute lactose-free milk in the glaze.
