Ingredients
  

Fruit
  • 2 cup watermelon cubed
  • 2 cup strawberries halved
  • 2 cup pineapple fresh pineapple chunks
  • 1 cup blueberries
  • 1 cup raspberries
  • 2 kiwis peeled and sliced
  • 1 cup green grapes seedless
  • 1 cup peach slices
Honey-lime dressing
  • 3 tbsp honey
  • 2 tbsp lime juice fresh
  • 1 tsp lime zest fresh
  • 1 fresh mint leaves for garnish

Method
 

Prep the fruit
  1. Cube the watermelon, halve the strawberries, and cut the pineapple into chunks, then peel and slice the kiwis and prep the remaining fruit. Place all prepped fruit in a large serving bowl.
Make the honey-lime dressing
  1. Whisk honey, fresh lime juice, and lime zest in a bowl until combined and glossy. Continue whisking until the honey fully dissolves.
Toss and chill
  1. Pour the honey-lime dressing over the fruit and gently toss to coat every piece. Toss just until the fruit looks evenly coated with a light sheen.
  2. Taste the salad and adjust honey or lime juice as desired to balance sweetness and tang. Stir again lightly after adjusting.
  3. Refrigerate the salad for 20 minutes so the flavors meld. Cover to prevent fruit from drying out.
Serve
  1. Scatter fresh mint leaves over the top and serve chilled. Keep the bowl cold until serving for the freshest texture.

Notes

Pro tip: slice and cube the fruit as uniformly as you can so every bite gets a similar honey-lime coating. Store covered in the fridge for up to 2 days; the fruit will still be tasty but gets juicier and softer over time. Freezing isn’t recommended because berries and stone fruit lose texture. For a lighter option, reduce honey to 2 tablespoons and add an extra 1 teaspoon lime juice to keep the flavor bright without extra sweetness.
