Ingredients
  

Chicken thighs
  • 1.5 lb boneless skinless chicken thighs
Teriyaki marinade and sauce
  • 0.33 cup soy sauce
  • 0.25 cup brown sugar, packed
  • 2 tbsp honey
  • 2 tbsp mirin or rice vinegar
  • 2 tbsp sake or dry sherry (optional)
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1 tbsp vegetable oil
  • 1 sesame seeds, sliced green onions, and steamed rice for serving

Method
 

Mix marinade and marinate
  1. Whisk together soy sauce, brown sugar, honey, mirin, sake, garlic, and ginger until the sugar dissolves and the mixture looks uniform. Reserve half for the sauce, then toss the chicken thighs with the other half and refrigerate for 20 minutes so the surface tastes seasoned.
Caramelize chicken
  1. Heat vegetable oil in a large skillet over medium-high heat until shimmering. Add the marinated chicken thighs and cook 5-6 minutes per side until caramelized and the center reaches 165°F, with dark amber edges showing as the glaze sets.
  2. Remove the chicken from the skillet to a plate and keep any juices behind, then lower heat slightly to avoid scorching when you add the reserved marinade.
Thicken sauce and glaze
  1. Pour the reserved marinade into the pan and bring it to a simmer, scraping up any browned bits from the bottom. Stir in the cornstarch slurry and cook 2-3 minutes until thick and glossy with a dark amber sheen.
  2. Return the chicken to the pan and turn to coat in the teriyaki sauce until the glaze clings to the thighs and looks sticky and shiny.
Serve
  1. Serve the glazed chicken over steamed rice and drizzle with any extra sauce from the pan for a glossy finish. Garnish with sesame seeds and sliced green onions so the coating looks embedded and slightly speckled.

Notes

For the glossier sticky coating, simmer the reserved marinade until it turns noticeably thicker before returning the chicken. Refrigerate leftovers in a sealed container up to 3 days; reheat gently in a skillet over medium-low until hot. Freezing is not recommended because the sauce can thin as it thaws. For a gluten-free swap, use tamari in place of soy sauce.
