Double-dip coating the chicken
- Mix all-purpose flour, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly combined. Coat all surfaces so the seasoning is distributed throughout the crust.
- Dredge each boneless skinless chicken breast in the seasoned flour. Ensure it is fully covered with a dry, even layer.
- Dip the chicken into the beaten large eggs. Let excess egg drip back so the coating stays thick and doesn’t turn gummy.
- Return the chicken to the seasoned flour and press lightly for a second coating. Lift off any loose flour to keep the crunch intact during frying.
Pan-fry for double crunch
- Heat 1/2 inch of vegetable oil in a large cast iron skillet over medium-high heat to 350°F. You should see steady, active sizzling when the chicken is added.
- Pan-fry the chicken for 5-6 minutes per side until golden and crunchy. Flip once and cook until internal temperature reaches 165°F.
- Drain the fried chicken briefly after frying. This helps the coating stay shatter-crisp instead of steaming.
Make and finish with honey garlic sauce
- Simmer honey, garlic, soy sauce, butter, and apple cider vinegar in a saucepan over medium heat for 3-4 minutes until slightly thickened. Stir as it reduces so the sauce turns glossy and clings.
- Pour the honey garlic sauce over the hot crispy chicken. Let it drip down the sides for a sticky, glazed finish that starts to shatter at the first bite.
- Garnish immediately with sesame seeds and sliced green onions. Serve right away while the crust is at peak crunch.
Notes
For extra crunch, keep the oil at 350°F and avoid overcrowding the cast iron skillet—frying temperature drops will soften the coating. Refrigerate leftovers in an airtight container for up to 3 days; reheat in a hot oven or air fryer for best texture (freezing is not recommended for crispness). For a lower-sodium option, use reduced-sodium soy sauce in the honey garlic sauce.
