Season and sear the chicken
- Season the boneless skinless chicken breasts generously with salt, pepper, garlic powder, and dried thyme. Heat the olive oil in a large skillet over medium-high heat and sear the chicken for 5-6 minutes per side until golden and cooked through to 165°F, then remove.
Brown the mushrooms and build the sauce
- Melt the butter in the same pan and cook the cremini mushrooms over medium-high heat for 5-6 minutes until deeply golden. Add the minced garlic and cook for 1 minute until fragrant.
Deglaze and reduce the wine
- Pour in the dry red wine (or white wine) and deglaze, scraping up all browned bits from the skillet. Simmer for 3 minutes until the liquid is slightly reduced and darker.
Simmer into a creamy wine sauce
- Add the chicken broth, heavy cream, Dijon mustard, and fresh thyme leaves. Simmer for 5-6 minutes, stirring occasionally, until the sauce thickens to a dark, glossy consistency.
Finish and serve
- Return the chicken breasts to the pan and spoon the mushroom wine sauce over each breast. Garnish with fresh thyme sprigs and serve immediately.
Notes
Pro tip: Keep the heat at medium-high during the sear and mushroom browning to develop deep fond and dark color for the sauce; don’t move the chicken too often. Store leftovers in an airtight container in the fridge for up to 3 days; reheat gently in a skillet over low heat with a splash of broth to loosen the sauce. Freezing is not recommended for best cream texture. For a lighter option, swap heavy cream for half-and-half and simmer 1-2 minutes longer to help it thicken.
